Many chefs think about how food tastes and looks. Me too and I'd like to add an extra dimension and think about how food makes us feel. And you know what I realized, usually it is the vegetables, fruits and herbs that make us feel good and have great health benefits.
Veggies in the lead
Really fresh fruits and vegetables of all colors are always the first for me, in combination with really good herbs and healthy oils. I love the culinary and wellness options of fruits and vegetables and I move them to the main role of my creations. Many of my dishes star in vegetables or fruits. We do some protein, I love my meat, I love my fish, but we only eat less and better quality, giving the vegetables a chance to shine.
One simple ingredient
One of my concepts is that we take one simple ingredient and serve it in four ways. We just did that successfully with white asparagus, now we come with strawberries and then with tomatoes. Strawberries in the soup, in the starter, main course and dessert. Strawberries in the soup? Wait until you see the menu soon. So I select a simple ingredient and find four creative ways to serve them. It's about me making the fruits and vegetables the stars of the show. Also in my bakery, where we try to make healthier desserts with less sugar and fat, with fruit in the lead. I am currently working on a dessert buffet based on cherries.
Health is our primary focus
We would like to work on health and create a balanced range with more natural, organic and vegetable products. When we are healthy, we also feel good. And that is the dimension I want to add to Jolliette's kitchen.
